Things can change in an instant, as David Kinch discovered in July 2014, when he got a call that has since become a marker of his personal and professional life. Manresa Restaurant, which he owned and had operated since 2002, and which has held two Michelin stars for nine consecutive years, had burned nearly to the ground. In the ensuing six months, mourning was followed by a drive to bring the restaurant to a new level of success, and time was spent experimenting with, ruminating on and developing new dishes. In this episode, “post-fire David” looks back at “pre-fire David” and cooks several dishes that came out of that time — including a new iteration of the restaurant’s signature dish, Into the Vegetable Garden.
