The remaining five finalists start the day in South Beach, where
they meet Guest Chef Norman Van Aken at his favorite fish market to
see the freshest local fish available. Norman has lived in South
Florida for years and is passionate about the various culinary
inspirations of the region. Back at Norman's Restaurant kitchen,
the finalists get their assignment: Each has one fish and one hour
to to prepare three separate dishes that incorporate Caribbean
influences and the spirit of South Florida. For the finalist with
the least inspired creation, it's time to be 86ed. The four left
standing will toast their success - they're on their way to New
York City.
